Ingredients

  • 1 cup all-purpose flour (maida)

  • ½ cup strawberry purée

  • ¼ cup milk

  • ½ cup powdered sugar

  • ¼ cup butter or Shalimar's Sunflower Oil

  • 1 egg

  • ½ teaspoon baking powder

  • ¼ teaspoon vanilla essence

  • ¼ teaspoon salt


Method

Preheat the oven to 180°C (356°F) and prepare a muffin tray with paper liners or lightly grease the moulds.

In a mixing bowl, beat the butter (or Shalimar's Sunflower Oil) and powdered sugar until smooth and well combined. Add the egg and vanilla essence, then whisk until the mixture becomes light and creamy.

Stir in the strawberry purée and milk, mixing well to form a smooth wet mixture.

In a separate bowl, combine the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and gently fold until a smooth batter is formed. Avoid overmixing.

Pour the batter evenly into the prepared muffin moulds, filling each about three-quarters full.

Bake at 180°C (356°F) for 15–20 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool completely before removing them from the moulds. Decorate as desired and serve.
