Ingredients
4 eggs
½ cup chicken sausages, finely chopped
¼ cup milk
¼ cup onion, finely chopped
¼ cup capsicum, finely chopped
½ cup mozzarella cheese, grated
¼ teaspoon Shalimar's Chef Spices Black Pepper Powder
Salt to taste
½ teaspoon olive oil or Shalimar's Sunflower Oil
Method
Preheat the oven to 180°C (356°F).
In a mixing bowl, whisk together the eggs, milk, salt, and Shalimar's Chef Spices Black Pepper Powder until smooth and well combined. Add the chopped chicken sausages, onion, and capsicum, and mix thoroughly.
Lightly grease a muffin tray with olive oil or Shalimar's Sunflower Oil. Pour the egg mixture evenly into the muffin cups, filling each about three-quarters full.
Sprinkle the grated mozzarella cheese over the top of each muffin.
Bake for 12–15 minutes, or until the muffins are set, lightly golden, and cooked through.
Allow them to cool slightly before removing them from the tray. Serve warm as a protein-rich breakfast, lunch-box treat, or light snack.
