Soybean Khichuri

Soybean Khichuri is a wholesome and protein-rich one-pot meal that combines nutritious soybeans with moong dal, rice, and vegetables. This hearty dish is not only nourishing but also flavorful, making it a satisfying choice for lunch or dinner.
The comforting combination of soft rice, lentils, vegetables, and protein-rich soybeans makes this khichuri both filling and delicious. Serve it hot with fresh yogurt, crispy papad, or pickle for a wholesome meal.

Ingredients
1 cup atap or Gobindobhog rice
¾ cup moong dal
1 cup soybean chunks
2 potatoes, cut into cubes
½ cup carrot, finely chopped
¼ cup green peas
1 tomato, finely chopped
1 tsp ginger paste
1 tsp garlic paste
4 green chillies
2 bay leaves
1 tsp cumin seeds
½ tsp Shalimar's Chef Spices Turmeric Powder
1 tsp Shalimar's Chef Spices Cumin Powder
1 tsp Shalimar's Chef Spices Coriander Powder
½ tsp Shalimar's Chef Spices Garam Masala Powder
2 tbsp Shalimar's Soyabean Oil
1 tbsp ghee
Salt, to taste
½ tsp sugar
5 cups hot water
Method
Soak the soybean chunks in hot water for 10 minutes. Drain, squeeze out the excess water thoroughly, and set aside.
Dry roast the moong dal until lightly golden. Wash and drain.
Heat Shalimar's Soyabean Oil in a heavy-bottomed pan. Add the bay leaves and cumin seeds and let them splutter. Add the ginger and garlic pastes, followed by the chopped tomato, turmeric powder, cumin powder, and coriander powder. Cook until the tomatoes soften and the spices are well combined.
Add the potatoes, carrots, green peas, and soybean chunks. Sauté for a few minutes.
Add the rice and roasted moong dal and mix well. Pour in the hot water and add salt and sugar. Cover and cook until the rice, dal, vegetables, and soybean chunks are tender.
Finally, add the ghee, garam masala powder, and green chillies. Cover and cook on low heat for 3–5 minutes.
Serve the Soybean Khichuri hot with yogurt, papad, pickle, or your favorite side dish.
