Oats Khichuri is a wholesome one-pot meal that is perfect for those looking for a nutritious and comforting dish. Rich in fibre, vitamins, and essential minerals, this light and easily digestible khichuri can be prepared quickly with simple ingredients.
Ideal for breakfast, a light lunch, or a healthy dinner, Oats Khichuri is both satisfying and convenient for everyday meals.

Ingredients
2 cups rolled oats
½ cup moong dal
½ cup carrots, finely chopped
½ cup beans, finely chopped
½ cup green peas
1 onion, finely chopped
1 tomato, finely chopped
1 tsp finely chopped ginger
2–3 green chillies, finely chopped
1 tsp cumin seeds
½ tsp Shalimar's Chef Spices Turmeric Powder
½ tsp Shalimar's Chef Spices Black Pepper Powder
1 tbsp ghee
1 tbsp Shalimar's Sunflower Oil
Salt, to taste
2 tbsp finely chopped coriander leaves
4 cups hot water
Method
Dry roast the moong dal until lightly golden. Wash and drain.
Heat the Shalimar's Sunflower Oil and ghee in a pan. Add the cumin seeds and let them splutter.
Add the chopped onion, ginger, and tomato. Sauté until softened. Add the carrots, beans, and green peas and cook for a few minutes.
Add the roasted moong dal and stir well. Pour in the hot water and add salt. Cook until the dal is almost tender.
Add the rolled oats and mix gently. Cover and cook for 5–7 minutes, or until the oats are soft and the khichuri reaches your preferred consistency.
Sprinkle with Shalimar's Chef Spices Black Pepper Powder and chopped coriander leaves.
Serve Oats Khichuri hot for a wholesome and comforting meal.
