Sabudana Khichuri

Sabudana Khichuri is a popular Indian dish, especially enjoyed during fasting and religious observances. Made with soft, translucent tapioca pearls, potatoes, roasted peanuts, and mild spices, this simple vegetarian dish is both flavorful and satisfying.
Popular in Maharashtra and several other parts of India, Sabudana Khichuri is light yet energizing, making it a wonderful choice for a wholesome meal during fasting days or whenever you want something simple and comforting.

Ingredients
2 cups sabudana (soaked for 4–5 hours and drained)
2 potatoes, cut into small cubes
½ cup roasted peanut powder
3–4 green chillies, finely chopped
1 tsp cumin seeds
8–10 curry leaves
1 tbsp ghee
1 tbsp Shalimar's Sunflower Oil
Salt or rock salt, to taste
½ tsp sugar
1 tbsp lemon juice
2 tbsp finely chopped coriander leaves
Method
Heat the Shalimar's Sunflower Oil and ghee in a pan. Add the cumin seeds and curry leaves and let them splutter.
Add the cubed potatoes and sauté until lightly golden. Add the chopped green chillies and cook for a few seconds.
Add the soaked sabudana, salt, sugar, and roasted peanut powder. Gently mix everything together, taking care not to mash the sabudana.
Cook on medium-low heat until the sabudana becomes translucent and soft.
Turn off the heat and add the lemon juice and chopped coriander leaves. Mix gently.
Serve Sabudana Khichuri hot as a wholesome fasting-day meal.
