Mutton Khichuri

Mutton Khichuri is a rich and indulgent Bengali one-pot dish that combines tender, succulent mutton with fragrant rice and lentils. The deep, savory flavors of the mutton blend beautifully with aromatic spices, creating a hearty and satisfying meal.

Perfect for Eid, family celebrations, festive occasions, or special gatherings, this flavorful khichuri adds a luxurious touch to the dining table. Serve it hot with raita, fresh salad, or spicy aloo bhaja for a delicious and complete meal.



Ingredients

  • 1 cup Gobindobhog or basmati rice

  • ¾ cup moong dal

  • 500 g mutton

  • 2 potatoes, cut into large pieces

  • 2 onions, finely chopped

  • 1 tomato, finely chopped

  • 1 tbsp ginger paste

  • 1 tbsp garlic paste

  • 3 tbsp sour yogurt

  • 4 green chillies

  • 2 bay leaves

  • 1-inch cinnamon stick

  • 3 green cardamoms

  • 4 cloves

  • 1 tsp cumin seeds

  • 1 tsp Shalimar's Chef Spices Turmeric Powder

  • 1 tsp Shalimar's Chef Spices Red Chilli Powder

  • 1 tsp Shalimar's Chef Spices Coriander Powder

  • 1 tsp Shalimar's Chef Spices Cumin Powder

  • ½ tsp Shalimar's Chef Spices Garam Masala Powder

  • 4 tbsp Shalimar's Mustard Oil

  • 2 tbsp ghee

  • Salt, to taste

  • 6 cups hot water


Method

Marinate the mutton with sour yogurt, ginger paste, garlic paste, turmeric powder, and salt. Set aside for 30 minutes.

Dry roast the moong dal until lightly golden. Wash and drain.

Heat Shalimar's Mustard Oil in a heavy-bottomed pan. Add the cinnamon, cardamom, cloves, bay leaves, and cumin seeds. Let them splutter and release their aroma.

Add the chopped onions and sauté until golden. Add the marinated mutton and cook thoroughly until it is well browned and the oil begins to separate. Add the chopped tomato, red chilli powder, coriander powder, and cumin powder. Cook until the tomatoes soften and the spices are well incorporated.

Cook the mutton until it is partially tender. Add the potatoes, rice, and roasted moong dal and mix gently.

Pour in the hot water and add salt. Cover and cook until the mutton, potatoes, rice, and dal are completely tender and the khichuri reaches a soft, rich consistency.

Finally, add the ghee, garam masala powder, and green chillies. Cover and cook on low heat for 5 minutes.

Serve the rich and aromatic Mutton Khichuri hot with raita, fresh salad, or spicy potato fry.
