Uttapam is a popular and nutritious South Indian breakfast dish that resembles a thick, soft dosa. Made from a fermented batter of rice and lentils, it is topped with a colorful assortment of fresh vegetables, giving it a delightful texture and flavor. Soft, fluffy, and packed with wholesome ingredients, Uttapam is a satisfying meal that is perfect for breakfast, brunch, or even a light dinner. The combination of the tangy fermented batter and the freshness of vegetables makes it both delicious and nourishing. Traditionally served with coconut chutney and hot sambar, Uttapam is a comforting classic that showcases the vibrant flavors of South Indian cuisine.

Ingredients
2 cups idli-dosa batter
½ cup finely chopped onion
¼ cup finely chopped tomato
¼ cup finely chopped capsicum
1 tsp finely chopped green chilli
2 tbsp finely chopped coriander leaves
Salt, to taste
2 tbsp Shalimar's Sunflower Oil
Method
In a bowl, combine the chopped onion, tomato, capsicum, green chilli, and coriander leaves. Mix well and set aside.
Heat a non-stick tawa or griddle and lightly grease it with Shalimar's Sunflower Oil.
Pour a ladleful of the idli-dosa batter onto the hot tawa and spread it gently into a thick round pancake. Unlike a dosa, the batter should be spread only slightly to retain its soft and fluffy texture.
Evenly sprinkle the prepared vegetable mixture over the batter and gently press it down with a spatula so that the vegetables adhere to the surface.
Drizzle a little Shalimar's Sunflower Oil around the edges and cook on medium heat until the underside turns golden brown and the batter is cooked through.
Carefully flip the uttapam and cook for another 1–2 minutes until the vegetables are lightly roasted and the other side is fully cooked.
Serve hot with coconut chutney and steaming sambar for a wholesome and delicious South Indian breakfast.
