Ven Pongal is one of the most beloved traditional dishes of South India, particularly in the state of Tamil Nadu. This comforting savory preparation is made with a wholesome combination of rice and moong dal, creating a soft and creamy texture that is both nourishing and satisfying. Although mild in flavor, Ven Pongal is enriched with the aromatic goodness of ghee, black pepper, cumin, and roasted cashew nuts, which give the dish its distinctive character and irresistible appeal.
The word “Ven” means white or savory, distinguishing it from the sweet version known as Sakkarai Pongal. While it is widely enjoyed as a hearty breakfast, Ven Pongal also holds special significance during the harvest festival of Pongal, where it is prepared as a traditional offering and festive delicacy.
Comforting, flavorful, and easy to digest, Ven Pongal is best served hot with sambar, coconut chutney, or a side of crispy vada, making it a timeless favorite in South Indian cuisine.

Ingredients
1 cup raw rice
½ cup moong dal (split yellow lentils)
4 cups water
3 tbsp ghee or Shalimar's Sunflower Oil
1 tsp cumin seeds
1 tsp whole black peppercorns
1 tsp finely chopped ginger
10–12 cashew nuts
8–10 curry leaves
A pinch of Shalimar's Chef Spices Asafoetida (Hing)
Salt, to taste
Method
Lightly dry roast the moong dal until fragrant. Wash it thoroughly along with the rice.
Transfer the rice and dal to a pressure cooker or a heavy-bottomed pot. Add the water and salt, then cook until the mixture becomes soft, creamy, and slightly mushy, which is the characteristic texture of Ven Pongal.
Heat the ghee or Shalimar's Sunflower Oil in a pan. Fry the cashew nuts until golden brown and crisp. Remove and set aside.
In the same pan, add the cumin seeds, whole black peppercorns, chopped ginger, Shalimar's Chef Spices Asafoetida (Hing), and curry leaves. Sauté until the spices become aromatic.
Pour this tempering over the cooked rice and dal mixture and stir well to combine all the flavors.
Garnish with the fried cashew nuts and mix gently.
Serve hot with sambar and coconut chutney for an authentic South Indian breakfast experience. Rich, comforting, and full of traditional flavors, Ven Pongal is a perfect dish for both everyday meals and festive occasions.
