Medu Vada is one of South India’s most iconic and beloved breakfast delicacies. Crispy on the outside and soft and fluffy on the inside, these savory lentil fritters are traditionally made from urad dal and seasoned with aromatic ingredients. A staple of South Indian cuisine, Medu Vada is often enjoyed alongside idli, dosa, and sambar as part of a wholesome breakfast spread. When served with fresh coconut chutney and piping hot sambar, it offers a delightful combination of textures and flavors that has made it a favorite across generations. Perfect for breakfast, brunch, or an evening snack, Medu Vada is a timeless classic that brings the authentic taste of South India to every table.

Ingredients
1 cup urad dal (split black gram)
1 tsp finely chopped ginger
2 green chillies, finely chopped
1 tbsp finely chopped curry leaves
½ tsp Shalimar's Chef Spices Black Pepper Powder
Salt, to taste
Shalimar's Soyabean Oil, for deep frying
Method
Soak the urad dal for 4–5 hours. Drain the water completely and grind the dal into a smooth, fluffy batter using as little water as possible.
Transfer the batter to a mixing bowl and add the ginger, green chillies, curry leaves, Shalimar's Chef Spices Black Pepper Powder, and salt. Beat the batter well to incorporate air, which helps make the vadas light and soft.
Heat Shalimar's Soyabean Oil in a deep frying pan or kadai over medium heat.
Lightly wet your hands, take a small portion of the batter, and shape it into a round vada. Make a hole in the center to create the traditional doughnut-like shape.
Carefully slide the vadas into the hot oil and fry on medium heat until they turn golden brown and crisp on all sides.
Remove and drain on paper towels to absorb any excess oil.
Serve hot with coconut chutney and steaming sambar for an authentic South Indian breakfast experience.
