Ingredients
For the Chicken Marinade
500 g boneless chicken
2 tablespoons lemon juice
1 teaspoon garlic paste
½ teaspoon Shalimar's Chef Spices Black Pepper Powder
Salt to taste
1 tablespoon Shalimar's Sunflower Oil
For the Mango Salsa
1 cup ripe mango, diced
½ cup onion, finely chopped
½ cup tomato, finely chopped
½ cup capsicum, finely chopped
1–2 green chillies, finely chopped
1 tablespoon lemon juice
2 tablespoons fresh coriander leaves, chopped
Salt to taste
1 teaspoon honey
For Cooking
1 tablespoon butter
1 tablespoon Shalimar's Sunflower Oil
Method
Wash and clean the chicken thoroughly. In a bowl, combine the chicken with lemon juice, garlic paste, Shalimar's Chef Spices Black Pepper Powder, salt, and Shalimar's Sunflower Oil. Mix well and marinate for 20–30 minutes.
Meanwhile, prepare the mango salsa. In a separate bowl, combine the diced mango, onion, tomato, capsicum, green chillies, lemon juice, coriander leaves, salt, and honey. Toss gently until well mixed. Refrigerate the salsa for a while to allow the flavors to meld together.
Heat a pan over medium heat and add the butter and Shalimar's Sunflower Oil.
Place the marinated chicken in the pan and cook or grill until both sides turn golden brown and the chicken is fully cooked through.
Transfer the cooked chicken to a serving platter.
Top the warm chicken with the chilled mango salsa just before serving.
