Prawn, Musk Melon & Peanut Salad

When the summer heat calls for something light, fresh, and full of flavor, this vibrant salad is the perfect choice. The delicate taste of prawns, the juicy sweetness of musk melon, and the satisfying crunch of peanuts come together to create a truly refreshing dish. Packed with protein and balanced nutrition, it offers a delightful combination of textures and flavors that make warm afternoons feel a little more comfortable. Quick and easy to prepare, this salad is ideal for everything from elegant entertaining to a light and wholesome dinner.



Ingredients

  • 250 g prawns, peeled and cleaned

  • 2 cups musk melon, cut into cubes

  • 1 cup cucumber, sliced

  • ¼ cup onion, thinly sliced

  • 2 tbsp cashew nuts, lightly roasted

  • 2 tbsp peanuts, roasted

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp honey

  • ½ tsp Shalimar's Chef Spices Black Pepper Powder

  • Salt, to taste

  • A few fresh mint leaves, for garnish


Method

Wash the prawns thoroughly and season them with a little salt and Shalimar's Chef Spices Black Pepper Powder. Heat a small amount of oil in a pan and lightly sauté the prawns for 2–3 minutes, just until cooked through. Avoid overcooking, as they can become tough. Set aside to cool.

In a large mixing bowl, combine the musk melon cubes, cucumber slices, and onion. Add the cooked prawns and gently toss everything together.

Sprinkle the roasted cashew nuts and peanuts over the salad to add a delicious crunch and texture.

In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper powder to prepare the dressing. Pour the dressing over the salad and toss lightly until all the ingredients are evenly coated.

Garnish with fresh mint leaves and serve chilled for a refreshing, nutritious, and flavorful summer salad.
