Lemon Rice

Lemon Rice is a vibrant and flavorful South Indian rice dish that is loved for its refreshing taste and simplicity. Infused with the zesty tang of fresh lemon juice, the aroma of curry leaves, and the delightful crunch of roasted peanuts, this dish offers a perfect balance of flavors and textures. Quick and easy to prepare, Lemon Rice is a popular choice for lunch boxes, light meals, festive spreads, and travel-friendly meals. Its bright flavor, comforting appeal, and effortless preparation make it a timeless favorite in South Indian cuisine.



Ingredients

  • 3 cups cooked rice

  • 2 tbsp fresh lemon juice

  • ¼ cup peanuts

  • 2 green chillies, slit

  • 10–12 curry leaves

  • ½ tsp Shalimar's Chef Spices Turmeric Powder

  • 1 tsp mustard seeds

  • 1 tsp urad dal (split black gram)

  • 1 tsp chana dal (split Bengal gram)

  • 2 dried red chillies

  • 2 tbsp Shalimar's Coconut Oil

  • Salt, to taste


Method

Heat Shalimar's Coconut Oil in a pan and fry the peanuts until golden and crunchy. Remove and set aside.

In the same pan, add the mustard seeds and allow them to crackle. Add the urad dal, chana dal, dried red chillies, and curry leaves. Sauté until the dals turn lightly golden and aromatic.

Add the slit green chillies and Shalimar's Chef Spices Turmeric Powder. Stir for a few seconds to release the flavors.

Add the cooked rice and salt, then gently mix until the rice is evenly coated with the spices and tempering. Cook for 2–3 minutes, stirring occasionally.

Turn off the heat and add the fried peanuts and fresh lemon juice. Mix gently to combine all the ingredients.

Cover and let the rice rest for a few minutes before serving.

Serve warm or at room temperature as a delicious and refreshing South Indian meal, perfect for lunch boxes, travel meals, or light everyday dining.
