Curd Rice is a classic South Indian comfort food that is cherished for its simplicity, soothing taste, and nourishing qualities. Made with a wholesome combination of cooked rice, yogurt, and aromatic tempering, this traditional dish is especially popular during hot weather for its cooling and digestive benefits. Light yet satisfying, Curd Rice helps promote gut health while offering a refreshing and comforting meal experience. Ingredients
2 cups cooked rice (preferably short-grain rice), cooled
1 cup yogurt (curd)
½ cup milk
Salt, to taste
1 tbsp finely chopped coriander leaves
2 tbsp pomegranate seeds
For the Tempering
1 tsp Shalimar's Coconut Oil
½ tsp mustard seeds
1 tsp urad dal (split black gram)
1 dried red chilli
1 green chilli, finely chopped
8–10 curry leaves
1 tsp finely chopped ginger
A pinch of Shalimar's Chef Spices Asafoetida (Hing)
Method
In a large bowl, lightly mash the cooked rice until it reaches a soft consistency.
Add the yogurt, milk, and salt to the rice and mix well until smooth and creamy.
Heat Shalimar's Coconut Oil in a small pan. Add the mustard seeds and allow them to crackle. Then add the urad dal, dried red chilli, green chilli, curry leaves, chopped ginger, and a pinch of Shalimar's Chef Spices Asafoetida (Hing). Sauté for a few seconds until the dal turns lightly golden and the tempering becomes aromatic.
Pour the tempering over the rice and yogurt mixture and stir well to combine.
Garnish with chopped coriander leaves and pomegranate seeds.
Serve chilled for the best flavor and a refreshing South Indian dining experience. Curd Rice makes a perfect light meal and is especially enjoyable during warm weather.
