In Kolkata, Puja and Fish Fry have been a much-loved combination for generations. Whether it is a quick bite before heading out to admire the pandals or a hot snack served while entertaining guests at home, the demand for freshly fried Fish Fry never fades during the festive season.

Cheesy Fish Fry gives this iconic Kolkata favourite a delicious modern twist by adding a gooey cheese filling to the familiar preparation. With a crisp, golden coating on the outside and tender fish, melted cheese, and flavourful fillings inside, this irresistible snack is sure to stand out on your Puja menu.

Ingredients

  • 6 bhetki fillets

  • 1 cup grated cheese

  • ¼ cup finely chopped onion

  • 1 tsp finely chopped green chilli

  • 1 tsp Shalimar's Chef Spices Black Pepper Powder

  • 1 tbsp lemon juice

  • ½ cup all-purpose flour (maida)

  • 2 eggs, beaten

  • 1 cup breadcrumbs

  • Salt, to taste

  • Shalimar's Sunflower Oil, for deep-frying

Method

  1. Marinate the bhetki fillets with lemon juice, salt, and Shalimar's Chef Spices Black Pepper Powder. Set aside for 15–20 minutes.

  2. In a bowl, mix the grated cheese with the chopped onion and green chilli.

  3. Place one fish fillet on a clean surface and spread some of the cheese mixture over it. Cover with another fillet to create a sandwich-like preparation. Repeat with the remaining fillets.

  4. Carefully coat each stuffed fish portion with all-purpose flour, dip it into the beaten egg, and then coat it evenly with breadcrumbs.

  5. Heat Shalimar's Sunflower Oil in a deep pan over medium heat.

  6. Gently slide in the coated fish portions and fry until the coating turns crisp and golden and the fish is thoroughly cooked.

  7. Remove and drain on a kitchen towel.

  8. Serve hot while the cheese filling is deliciously soft, with kasundi or your favourite dip.
