Ingredients

  • 8–10 pointed gourds (potol/parwal)

  • 1 cup fresh cottage cheese (chana), crumbled

  • Cashew nuts, raisins, and dried mango leather (aamshotto), finely chopped, as required

  • 1 teaspoon ginger paste

  • 2 green chilies, finely chopped

  • 1 teaspoon Shalimar's Chef Spices Cumin Powder

  • 1 teaspoon Shalimar's Chef Spices Coriander Powder

  • ½ teaspoon Shalimar's Chef Spices Turmeric Powder

  • ½ teaspoon Shalimar's Chef Spices Red Chili Powder

  • 1 tomato, finely chopped

  • Salt to taste

  • 1 teaspoon sugar

  • ½ teaspoon Shalimar's Chef Spices Garam Masala Powder

  • 1 tablespoon ghee

  • 3 tablespoons Shalimar's Mustard Oil

  • Water, as required


Method

Peel the pointed gourds lightly, trim the ends, and carefully scoop out the seeds from the center without breaking them.

Heat Shalimar's Mustard Oil in a pan and lightly fry the pointed gourds until slightly golden. Remove and set aside.

For the stuffing, heat a little oil in a pan and sauté the ginger paste and chopped green chilies until fragrant. Add the chopped cashews, raisins, and dried mango leather. Stir well.

Mix in the crumbled cottage cheese, salt, sugar, and a pinch of Shalimar's Chef Spices Garam Masala Powder. Cook for 2–3 minutes and remove from the heat. Allow the mixture to cool slightly.

Stuff the prepared filling into the hollowed-out pointed gourds and keep them aside.

Heat the remaining oil in a pan and add the chopped tomato. Cook until soft and pulpy.

Add salt, Shalimar's Chef Spices Turmeric Powder, Shalimar's Chef Spices Cumin Powder, Shalimar's Chef Spices Coriander Powder, and Shalimar's Chef Spices Red Chili Powder. Sauté until the spices are well cooked and the oil begins to separate.

Add a little water to form a smooth gravy. Carefully place the stuffed pointed gourds into the pan, cover, and cook over low heat until they become tender and absorb the flavors of the gravy.

Once the gravy thickens, add the sugar, remaining Shalimar's Chef Spices Garam Masala Powder, and ghee. Mix gently and cook for another minute.

Serve hot with steamed rice, pulao, or luchi. This elegant Chanar Pur Bhora Potoler Dolma is a festive Bengali delicacy that combines rich flavors, beautiful presentation, and timeless tradition in every bite.
